Anticariogenic Effects of Latilactobacillus sakei subsp. sakei THYJ-15 Isolated from Kimchi against Streptococcus mutans

Dental caries is an infectious disease that caused by the interaction between host, diet, and a diverse microbial community. This study illustrated anticariogenic effects of THYJ-15 against Streptococcus mutans, major agent dental caries. was identified as Latilactobacillus sakei subsp. through 16S rRNA sequencing, with similarity 99.72% to L. JCM 1157T. The cell-free supernatant observed MIC values 10 mg/mL MBC 20 S. mutans KACC 16833T. showed significant inhibitory on biofilm formation, acid production glucosyltransferases(GTFs) mutans. As results, it confirmed lactic bacterium possessing notable effects. Accordingly, expected have great potential be used basic substance for treatment
